What is workout. There are many workouts in the app. Which should i choose?
There are different workouts to target different areas of your body. Figure out what you want to work on (shoulders, back, legs, etc) and choose a workout based on that. Also, go over the different exercises in the workout beforehand so you'll be well acquainted with them before starting.

Check out those two. I'm really the wrong person to suggest workouts so maybe someone else will come along to help you better.
Or you could go to the Workout section and search under Strength. There are plenty to choose from casual to intense.
