I need help with this.... I have celery tofu quinoa noodles ... but I want something that's good for a post workout dinner kind of thing... but not a super intense workout...

Throw in some protein.  Black beans in a quinoa salad with some onions & bell peppers.

What could I sub the peppers for?

You can sub pretty much any vegetable you have. Experiment to see what combinations you like.
