Turkey breast with crushed potato spring onion and cheese
350 gr of fresh turkey breast
Seasoned with tarragon and chilly flakes
Wrap it in tin foil,that way keeps the turkey moist
Put into the oven for 90 min on 170c
Crushed potato ingredient
350 gram red-skinned potatoes,unpeeled
( cut any large ones to the same size as the smaller ones )
4 tsp low fat butter
4 spring onion
50gr cornichons or sweet pickled gerkhings
50 gr low fat cheese, grated
Freshly ground black pepper
Boil the potatoes in salted boiling water untill tender.
Meanwhile, finely chop the spring onions on the diagonal and dice the cornichons.
Drain the potatoes and roughly crush them ( still in their skin ) with a potato masher.
Add the butter
Stir in the spring onion and cornichons, then fold the cheese in
Taste and season as necessary.then serve
Under 400 calorie per meal
I made that today and have to say wouldn't have thought the crushed potato would be so tasty, flavoursome :)
