Easy recipes / food prep tips?

Hey everyone! I hope all your fitness dreams are coming true!

Mine aren't...

I posted a couple weeks ago about how I really hate cooking and if there's any way to lose weight using mostly finger foods and ready-to-eat from the box stuff. You all responded with a resounding 'no!'

Ok so now, I have a more specific question. I need recipes. I don't really trust Google searches on nutrition because there's just so many conflicting opinions out there. I want to know whats working for you!

I'm looking for two types of recipes:
1) Simple recipes that are quick to prepare and have minimal cleanup, for like one meal at a time.

2) Bulk recipes where I can cook once and then be good for several days.

I'm also interested in tips and tricks. For example, last night I bought a bunch of fresh veggies and cut them all up, so if I want a snack they're right there, as easily accessible as potato chips.

Basically, what deters me from eating healthy is the inconvenience of food prep. What do you do to minimize the inconvenience?

(And if you love cooking, good for you, but I don't want to hear you telling me to get over it and just learn to like it. That's not a reasonable goal for me at this point.)

Maybe a tuna sandwich or turkey sandwich it really isnt that time consuming

I like fish tacos...quick and easy.

Marinade (if you have time)
1/4 cup extra virgin olive oil
2 tbsp white vinegar
2 tbsp fresh lime juice
2 tsp lime zest
1 1/2 tsp of honey
2 cloves garlic minced
1/2 tsp cumin
1/2 tsp of chili powder
1 tsp seafood season
1/2 tsp ground black pepper
1 tsp hot pepper sauce

1 lb tilapia cut into chunks

Dressing
1 (8 Oz container) light sour cream
1/2 cup adobe sauce from Chipotle peppers
2 tbsp fresh lime juice
2 tsp lime zest
1/4 tsp cumin
1/4 tsp chili powder
1/2 tsp seafood seasoning
Salt and pepper to taste

Toppings
1 package of tortillas
3 ripe tomatoes seeded and diced
1 bunch cilantro chopped
1 small head cabbage cored and shredded
2 limes cut in wedges

Put all of the marinade ingredients in a bowl and mix.

Let tilapia sit in it for a few hours in the fridge...if pressed for time. 
Dip and cook lol

Combine dressing ingredients

Warm tacos Place fish, toppings, and drizzle dressing...

Now this sounds like a lot, BUT you don't have to use ALL of the ingredients.  I would say the best is the cumin, lime, chili powder and pepper...

The only thing you cook is the fish!

Thanks! I'm glad you pointed out that I don't have to use all the ingredients. And is this something I could make a double batch of and have it the next day? Just wondering.

Yep! Cook the fish and slice the veggies....all you need to do is warm up the fish..if you want and out them in the tacos with the veggies!

Sorry cook the day before...and put it in a Tupperware!

Pork with Mushroom Sauce and Potato Wedges

Spices
Rosemary
Salt to taste
Pepper
Garlic Powder
Olive Oil

Ingredients
Mushroom soup
Pork chops
Potatoes
Cornstarch
Tomato paste

Slice potatoes in half and then the halves in 3rds
Mix rosemary, salt, pepper and toss with potatoes in oil
Place on cookie sheet for 20 min then turn over and cook for 15 min...or until done
Season pork chops with salt, pepper,  garlic and rosemary and pepper
Sear pork chops for 5 min on each side (if thin...if not, look for cooking time)
Cook mushroom soup with 1 tsp of cornstarch and 1 tbsp of tomato paste
Place pick chop on plate and cover with soup (as a sauce) the plate potatoes. .

Optional
Brussel Sprouts (which I love)
Sautee with salt, garlic, and pepper

Remember,  you can make the recipe as simple or as complicated as you want lol...
